I installed PrivateGSM. Will every call I make be in safe mode?

No. You'll be always able to decide whether calling in safe mode or standard mode. Remember that in order for your mobile phone calls to be secure, the recipient needs to have PrivateGSM installed as well (Note that “Receive-Only” mode is free and available for all your contacts).
